Walnuts are so much smoother and creamier if you soak them, and when you drain the water off, you’ll also be washing away the anti-nutrients, making them better for you and easier to digest! I tried whizzing them up into a milk and was amazed at this their creamy deliciousness. Add a really ripe banana for some sweetness, vanilla for a touch of softness and crisp green lettuce for all the goodies it contains and you’ve got a fun, thick, delicious and nutritious smoothie that really hits the spot.
Ingredients:
2/3 cup walnuts, soaked (preferably for 24 hours to make them really soft)
1 ripe banana
1/3 tsp vanilla seeds
1 1/2 cups water
6-10 romaine lettuce leaves

Method:
· Drain the walnuts and rinse them well.
· Add the walnuts to the blender, along with the roughly broken up banana, vanilla seeds and water.
· Blend until smooth, using the pulse button if you have one to help break up the walnuts.
· Break up the lettuce leaves with your hands and add to the liquid in the blender. Re-blend until really smooth.
